NCAA Women's Tourney (First Round)

This past weekend, Duke hosted the first round of the NCAA Women's National Tournament. I decided this was the perfect opportunity to check out Duke and Cameron Indoor Stadium. The first game of the day was (7)LSU vs. (10)Hartford and the second was (2)Duke vs. (15)Hampton. The high seeds won each game, but it was still fun to watch.

Cameron was definitely not what I was expecting. It reminded me of an old high school gym. I couldn't believe it. I can't even imagine that placed packed on big game days. I bet it would be awesome to play there. Here are a few pictures from the arena:

Following the LSU win, Duke soundly beat Hampton. While the game wasn't too interesting after the first 10 minutes, the Hampton fans and band kept us entertained. They were awesome...playing songs and dancing and singing. It was amazing!! I was so happy to see that! Here are a few pics:
Following the games, Brett introduced me to a fantastic restaurant in Chapel Hill called Mama Dip's. They serve southern home cooking....it was delicious!! I had the chicken & dumplings, along with zucchini casserole and yams...so good!!

So concluded our day! It was so much fun and I can't wait to see some more sporting events around the area!!

Delicious Crock-Pot Recipe

Last night, I tried a new recipe from my Crock-Pot book! Let me tell you, it was awesome!! I thought I'd share with you!

Sandy's Mexican Chicken

2 to 4 chicken breasts
1 medium onion, sliced
1 can (10.75 oz) condensed cream of chicken
1 can (10 oz) Rotel, undrained
8 oz Velveeta cheese

Place chicken, onion, soup and Rotel in the Crock-Pot. Cover; cook on low for 6-8 hours or on high for 4 hours.

Break up chicken into pieces. Add cubed cheese; cook on high until melted.

The book recommends serving it over spaghetti (which I did), but my roommate suggested it would taste much better served with tortillas (which I think would be amazing).

This recipe is super easy and very good! Try it out and see what you think!

New Job!!

I know, I know!!! It's been forever since my last post! I just haven't been doing anything interesting enough to blog about! This week, though, I started a new job, and I think it's blog-worthy!

I accepted a job at the Hilton right up the road from me in Durham. Right now, I'm the cashier in the hotel's restaurant, and I'm hoping this is a good start to something more to come. I worked for two summers at a resort in Colorado, so I was a little familiar with the hospitality industry, but I'm hoping this job can help me diversify my resume a little more. I have never actually had a job handling money, so I wanted to do something so I could get some experience with that. Also, I'm hoping this will be a good starting point for greater things to come! We'll see! I mean, it's only my first week!

Anyways, I just wanted to let you know about my new job! I'm still loving North Carolina and I'm still happy about the move! Once I get settled in with my job and get started making money, my travels around NC can start!

In other news...CONGRATULATIONS to my cousin, Alichia, on the birth of her new baby girl, Emma! She joins sister, Abby, which you may remember from my previous blogs. I am so excited for the Moons and can't wait to meet little Miss Emma!
